Yakimeshi – Japanese Fried Rice
Japanese Fried Rice, known as “Yakimeshi” in Japan, is a very flavorful and delicious recipe that is very easy to make. This is because it doesn’t require any special ingredients and you can create it with things you probably already have in your kitchen.
Yakimeshi is usually cooked with leftover rice, so rice cooking time is not included. You can also replace bacon with ham, shrimp, salmon pieces, and replace or add different vegetables such as onion, carrot, green beans, peas, etc.

Ingredients
- 2 tablespoons cooked rice
- 2 spoons of mayonnaise, if possible a Japanese brand better.
- 2 thin slices of bacon
- 2 pieces eggs
- ¼ cup green shallots
- ½ teaspoon salt
- pepper to taste
Preparation
- In a small bowl, mix the mayonnaise well with the cooked rice.
- Chop the green shallots and bacon into small pieces.
- Heat a little olive oil in a frying pan over high heat, add the rice and fry for a few minutes.
- Set the rice aside in the pan, add the eggs and beat.
- Once the egg is half cooked, mix it into the rice.
- Add the bacon and cook for about 5 minutes.
- Add the shallots and salt. Stir a little.
- Remove from the heat and sprinkle some pepper and voila!
