Tatsuta-age -Japanese Fried Chicken
Japanese-Style Fried Chicken – A favorite in bento, izakaya, or even at home!
The most common type of Karaage is known as Tatsuta-age, which is usually the chicken is first marinated in soy sauce and then covered in potato starch. Its name refers to the reddish-brown color given by the soy sauce, which resembles the color of the Tatsuta River in autumn, when the surrounding Japanese maples give the river a similar hue.

Ingredients :
- 300g approx chicken breast or thigh
- 3 tablespoons Potato starch
- vegetable oil the necessary to make deep frying (deep fry)
- Fresh lettuce the amount you want (it can be any other vegetable of your choice)
- lemon the amount you want
marinade sauce
- ½ teaspoonful grated ginger
- 1½ tablespoons Soy sauce, preferably a Japanese brand
- 1 tablespoon sake
- ½ tablespoon mirin
Instructions:
- Slice the chicken and cut it into easy-to-eat pieces
- Place the chicken in a bowl and add the marinade sauce, massage and reserve for 10 minutes.
- Cover with the potato starch, then fry in abundant oil heated to 170 to 180°C
- Once the chicken is fried, serve it on a plate garnished with lettuce and lemon slices if you wish.
