Tamagoyaki – Japanese-style omelet

One of the easiest and most versatile side dishes in Japanese cuisine is the Japanese-style omelet known as “Tamagoyaki” which literally means “grilled/fried egg”. Enjoy it for breakfast, add it to your bento lunch, or include it as a filling in sushi.

Preparation time : 5 minutes

Cooking time : 10 minutes

INGREDIENTS

– 4 eggs
– 1 tablespoon of soy sauce (preferably Japanese)
– 1 tablespoon of mirin
– 1 spoon of sugar
– pinch of salt
– cooking oil as needed

UTENSILS

– Bowl to beat the eggs
– Fork or Saibashi (long chopsticks for cooking)
– Square pan (you can also use a round pan)

NOTE : Instead of mirin and soy sauce, you can use Japanese dashi soup broth for a similar flavor.

You can add other ingredients such as finely chopped spring onion and nori seaweed to give it more flavor.

PREPARATION MODE

1. Beat 4 eggs well in a bowl using a fork or hashi chopsticks.

2. Add the soy sauce, mirin and sugar and a little salt to the mixture.

3. Put a small amount of cooking oil in the skillet and turn up to medium heat. Have some kitchen paper handy to help keep the pan oiled during cooking.

4. Add a small amount of the egg mixture to the hot skillet. Once the egg has cooked a bit so that the top is still a bit raw, push it to the side of the pan.

5. Add another small amount of the egg mixture to the pan and wait again for it to cook a bit. You can then start rolling the first piece of egg over the mixture you just put in the pan until it’s a little egg roll.

6. Continue adding a small amount of egg while greasing the pan each time. As you add more egg and roll it up it will start to get bigger and it will be easier to add new layers. Keep adding the egg in new layers until you’ve used it all.

7. Ready! Remove the tamagoyaki from the pan and wait for it to cool before cutting it into thin pieces with a sharp knife.
