OKONOMIYAKI – THE MOST POPULAR DISH IN JAPAN
Okonomiyaki (お好み焼き) is a popular deep-fried dish that consists of a kind of egg omelet to which various ingredients are added, from meat and seafood to wasabi and cheese). As the name indicates “okonomi” literally means “to taste”. The dish is available throughout Japan, but is particularly popular in the cities of Hiroshima and Osaka.

Utensils
- Bowl to stir all the ingredients
- Cutting board
- Knife
- Nonstick skillet
Ingredients
- 4 eggs medium
- 200 ml dashi broth
- 270 g wheat flour
- 100 g bacon
- 80 g shrimp (you can use octopus or squid)
- 4 sheets cabbage (finely chopped)
- 2 or 3 tablespoons vegetable oil
- salt to taste
- ¼ finely chopped medium onion
to season
- okonomiyaki sauce to taste
- mayonnaise (if it is a Japanese brand better)
- Bonito flakes, katsuobushi
- Aonori to taste
Instructions
- Beat the eggs in a large bowl, then gradually whisk in the dashi broth.
- Place the flour in another bowl and gradually add the egg mixture, mixing slowly.
- Add bacon, cabbage, mix well.
- Heat a non-stick frying pan or teppan and grease with a little oil. Add the dough and fry until both sides are cooked. You can make several okonomiyaki per portion or a complete one, you choose!
- Brush one side of the okonomiyaki with okonomiyaki sauce and top with mayonnaise, bonito flakes, aonori. Serve immediately!
