Japanese Style Fluffy Pancakes

These Fluffy Japanese-Style Pancakes will be something very different for your next brunch or weekend breakfast! Although they take a little time to prepare, in the end the reward will be delicious!

  • Preparation: 10 minutes
  • Cook: 1 hour and 30 minutes (approximately 12 minute cook time per pancake)

Ingredients

  • 150g self-rising flour (it can be flour to prepare Hot cakes)
  • ½ teaspoon baking powder
  • 2 tablespoons of icing sugar
  • 2 eggs
  • 1 tablespoon vegetable oil
  • 180ml of milk
  • a pinch of vanilla extract
  • cooking spray or a mild-flavored cooking oil
  • maple syrup, ice cream, crispy bacon, berries, or whatever you want to top the pancakes with.

Preparation method

Step 1

Sift the flour and yeast into a bowl and add the sugar. Make a well in the center and add the eggs and oil. Stir them into the flour, then gradually add the milk and use a
whisk to beat the liquid. Add the vanilla.

Step 2

Put a nonstick skillet on low heat and place one or two nonstick bun rings (about 3.5cm high) in the skillet. Spray (or brush) the pan lightly with oil and also the inside of the rings. Fill them no more than ¾ full with the batter, then cover the pan with a lid and cook the pancakes for about 10 minutes over very low heat. By this time, the top of the pancakes should be covered in small bubbles and look dry around the edges.

Step 3

Very carefully flip the pancakes. You can do this by lifting each pancake on its rim onto the lid, then inverting the pan over them before flipping it over and removing the lid. Cook for another 1-2 minutes. Keep warm while you use the rest of the dough. Stack and serve with your favorite toppings!
