HIYASHI CHUKA is a Japanese dish with cold ramen noodles and various very colorful ingredients such as cucumber, ham, shrimp or crab, egg, etc. that are put on top of it in a ramen-type bowl. In the hot summers of Japan, this recipe is very desirable and it is very easy to make.

  • 360 gr thin noodles

Dip

  • 6 tablespoons Soy sauce
  • 4 tablespoons Granulated sugar
  • 3 tablespoons Rice vinegar
  • 2 tablespoons Sesame oil
  • ¼ tablespoon grated ginger
  • 2 tablespoons Water

  1. Put water to boil for the noodles. In what boils, we can perform the following steps
  2. When the water is boiling, we introduce the noodles and let them cook for the indicated time of the product. Normally it is about 3 minutes.

Dip

  1. Take 2 tablespoons of the water that you brought to a boil (that is hot but not boiling) and mix it in a small bowl with 6 tablespoons of soy sauce, 4 tablespoons of granulated sugar, 3 tablespoons of rice vinegar, 2 tablespoons of sesame oil and ¼ tablespoon grated ginger. Put it to cool in the refrigerator.

  1. Peel the skin of the carrot and cucumber, also removing the ends. Then we cut them into small strips less than 10 centimeters long (Juliana cut), so that they can fit easily into one bite.
  2. Similarly, we cut the York ham into strips the same size as the vegetable strips.
  3. We prepare the egg in Tamagoyaki style, or simply fried scrambled egg. We prepare it in the pan allowing the egg to take its shape (like an omelette), we turn it so that it cooks on both sides.
  4. Cut the egg that we prepared before, into small strips (Juliana cut)
  5. Divide the pasta into 3 portions on a deep plate or large bowl, and add the sauce (already cold) to each plate. We add the other ingredients. And that’s it, enjoy!
