Harusame Noodle Salad
Harusame are the noodles made from potato starch or mung bean starch. Low in calories and excellent for salads and soups. This dish is something we always crave when the weather is warmer because it’s so refreshing and delicious!

Utensils:
- 1 pot or casserole
- Knife
- Cutting board
- bowl for mixing ingredients
- Trowel or ladle to mix ingredients
Ingredients :
- 200 g Harusame Noodles
- ½ or 1 cucumber
- 1 carrot
- 4 slices York ham
- two medium eggs, made into a very thin omelet
Ingredients for the dressing
- 1 tablespoons sugar
- 2 to 3 tablespoons soy sauce (Japanese brand if possible)
- two tablespoons rice vinegar
- 1 tablespoons Sesame oil
- 1 tablespoons toasted sesame seeds (you can skip them if you don’t have them)
- 1 teaspoonful mustard
Instructions:
- Cook Harusame noodles according to directions. They are basically cooked in boiling water until they turn transparent. Rinse with cold water and drain well. If you don’t want them to be so long you can cut them in half
- Cut the cucumber, carrot and ham into very thin strips.
- Make a very thin egg omelette and cut it into very thin strips.
- Mix all the dressing ingredients in a bowl or bowl
- Place everything in a large mixing bowl, add the dressing and mix so that the ingredients are well combined with the noodles.
