Chahan – Japanese Fried Rice

Ingredients
- 180 g cold rice
- 1 big egg
- 30 g bacon or pancetta
- twenty g shrimp
- fifteen g leek (cut into small pieces)
- ginger, very little and finely chopped (if desired)
- two teaspoons vegetable oil
- salt and pepper to taste)
- 1 or 1½ teaspoons soy sauce (Japanese brand if possible)
Instructions
- You can use the rice left over from the last meal or you can prepare it too.
- Rinse the cold rice with water and drain it in a colander.
- Put vegetable oil and ginger in the pan and heat over medium heat.
- When the oil is hot enough, add the egg and stir vigorously with a wooden spatula.
- When the egg is half cooked, add the rice and fry while the rice is released, mixing it with the wooden spatula so that it mixes well with the egg.
- When the rice and egg are well mixed and the water has been removed, add salt and pepper to taste and fry quickly.
- Add the bacon or pancetta and the shrimp and fry.
- Add the leek and fry quickly.
- After quick frying, add soy sauce to mix well.
- To enjoy!
