Japanese-Style Fried Chicken – A favorite in bento, izakaya, or even at home!

The most common type of Karaage is known as Tatsuta-age, which is usually the chicken is first marinated in soy sauce and then covered in potato starch. Its name refers to the reddish-brown color given by the soy sauce, which resembles the color of the Tatsuta River in autumn, when the surrounding Japanese maples give the river a similar hue.

Equipment:

  • Cutting board

Ingredients :

  • 300g approx chicken breast or thigh
  • 3 tablespoons Potato starch
  • vegetable oil the necessary to make deep frying (deep fry)
  • Fresh lettuce the amount you want (it can be any other vegetable of your choice)
  • lemon the amount you want

marinade sauce

  • ½ teaspoonful grated ginger
  • 1½ tablespoons Soy sauce, preferably a Japanese brand
  • 1 tablespoon sake
  • ½ tablespoon mirin

Instructions:

  1. Slice the chicken and cut it into easy-to-eat pieces
  2. Place the chicken in a bowl and add the marinade sauce, massage and reserve for 10 minutes.
  3. Cover with the potato starch, then fry in abundant oil heated to 170 to 180°C
  4. Once the chicken is fried, serve it on a plate garnished with lettuce and lemon slices if you wish.
